Biryani is a Mughali cuisine but it is categorized as an Indian dish. Biryani is a typical celebration dish in India and an aromatic single meal dish. It is also a popular street food in India. While walking down the roads of Kolkata, you can see minimum 4 – 5 vendors on the streets selling Biryani.
This is a Main course (mixed rice dish) originated from Muslims. Not everyone who prepares Biryani have such pedigree that can make wonders.
Here I will share a small story.
Last Sunday, I woke up very late. Normally, I get up by 7 AM in the morning. But that day, I woke up at around 10 AM. It was my birthday. The previous day I returned home late, as I went for a late night movie with my friends, to give them a movie treat.
Soon after I woke up, I found aromatic smells coming from the kitchen. I went to the kitchen and saw that the meat is cooked and ready. The various ingredients used to prepare the main course like ghee, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger and garlic guice, tomatoes and onions kept on a plate. Potatoes are optional to use while preparing the recipe.
But I can’t found my mom anywhere in the house. I think she went to buy the rice.
Friends, I will now brief you what Biryani is and its preparation.
Biryani is the primary dish in a meal, where meat and rice are cooked separately before being layered and cooked together. It has more complex and stronger spices. Every spoonful of Biryani is slow cooked to perfection using the best ingredients to give you that perfect yummy taste that makes Kolkata so famous for Biryani.

So what was I telling? Yes, about the Kolkata Biryani. There is a special characteristic feature about the Kolkata Biryani. As we know that Biryani is rich in spices, the Kolkata is just the opposite. And, all the Biryani joints keep that parameter in mind while preparing the dish.
